With all the sap flowing out of the trees and into buckets all around me I was inspired to bake something with maple syrup. I rummaged through my recipe box and found this muffin recipe a friend gave me many years ago. The part I found most appealing is the first word in the name of the recipe: Easy Maple Banana Blueberry Muffins.
Really, it only took me about 15 minutes to get the muffins into the oven, and that includes adding one extra ingredient. blueberries. I took the liberty of throwing in 1-1/2 cups of Vermont-grown blueberries. Here is the final product. Now wasn’t that easy?
When I made the batch I filled a 12-muffin tin and had some leftover. Here’s what I did with that extra batter.

Easy Maple Banana Muffins
3-4 over-ripe bananas smashed
½ C maple syrup
¼ C melted butter
1 egg beaten
1 Tbsp. water with 1 Tsp. baking soda (mix, then add)
2 C flour
½ C walnuts, optional
Bake in 375 oven about 45 minutes.
